Harvested from untouched wild olive trees that have never known fertilizers, sprays, or human interference, this extraordinary olive oil boasts the world’s highest concentrations of polyphenols and oleocanthal. Our Land
Our estate is located in the historic Lykovouni, nestled between the majestic Taygetos and the imposing Parnonas mountains. The Ancient Spartans called Lykovouni the “Mountain of the Sun — of the First Sunbeam.”
Spanning 123 acres of rugged, untamed terrain, Lykovouni enjoys continuous sunshine, pure mountain air, and a gentle sea breeze from the Laconian Gulf.
Lykovouni has been declared a National Protected Forest, where the following are strictly prohibited:
- Any human intervention
- Spraying
- Cultivation or farming activities
- Agricultural machinery or vehicle passage
- Hunting
Due to the estate’s isolation and the protection of the forest, the trees are free from any harmful substances from neighbouring farmlands. Nature thrives freely here, and we simply respect it.
Before & After the fire of 2007
CURE - Sparta Mountains Olive Oil
Αfter the devastating fire of 2007, many of our Koroneiki, and local Laconian olive trees rose again from their roots, reborn in the wild. This dramatic revival transformed them into resilient, untamed trees, producing smaller fruits of extraordinary concentration and richness in polyphenols.
The fire’s ash and the renewed habitat sparked a flourishing of wild aromatic plants—oregano, thyme, lemon balm, strawberry tree, savory, and wild thyme—creating the perfect natural conditions for olives with exceptional levels of polyphenols, oleocanthal, and oleacin. In the wild, these compounds serve as the tree’s natural defence mechanism, activated only when it grows freely, without water or human intervention.
Τoday our estate consists of:
- Wild olive trees – about 1/3 of the grove. Small, untamed, low-yielding, but with fruits of unparalleled bioactivity.
- Revitalized post-fire wild olive trees – about 2/3 of the grove. Naturally evolved and highly resilient, and bursting with life.
